Moussaka recipe?
Has anyone heard of a recipe using yoghurt instead of cheese sauce, it`s just a faint memory that this is a way to make it but i love yoghurt. Also some recipes say leave sliced aubergines in salt first and others don`t. I`ve just picked seven small aubergines from one plant in the greenhouse and i`ve got the minced lamb. Any ideas about a recipe with yoghurt?
Moussaka
===========
1 onion
500g lean steak mince
1x400g can tomato's chopped
1 beef stock cube
2 courgettes
2 potatoes
300g/10.5 oz greek yoghurt
2 eggs
25g cheddar cheese.
Preheat oven to 200c/400f. gas 6.
Finely chop the onion, place in a large pan with the mince and cook gently until the meat has browned and the onion is soft.
Add the chopped tomatoes and crumble in the stock cube, stir and continue to cook for10 mins.
Peel and finely slice the potatoes and par-boil for 5 mins. Drain. Slice the courgette. Place the mince into an approx 23cmx18cm (9x7)inch rectangular oven proof dish. top with the sliced potaote and the courgette.
Whisk together the yoghurt and eggs until smooth, pour over the top of the moussaka, sprinkle with grated cheese and cook in the oven for approx 30-35 mins until golden and bubbly.
Cooks tip: Sprinkle a little grated nutmeg, Parmesan and ground cinnamon on top of the moussaka before cooking for a really authentic taste. Suitable to freeze for up to 3 months.
